Vegan Pumpkin Sugar Cookies



These pumpkin sugar cookies are soft and chewy, and they taste great with pumpkin spice. They're great for fall parties or just when you want something sweet.

Ingredients:

  • 1 cup pumpkin puree
  • 1/2 cup coconut oil, melted
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 cup granulated sugar for rolling

Instructions:

Preheat the oven to 350F 175C and line a baking sheet with parchment paper

In a large bowl, mix together the pumpkin puree, melted coconut oil, brown sugar, maple syrup, and vanilla extract until well combined

In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves

Gradually add the dry ingredients to the wet ingredients, stirring until a dough forms

Place the granulated sugar in a shallow dish

Scoop out tablespoon-sized portions of dough and roll them into balls

Roll each ball in the granulated sugar until coated

Place the sugar-coated dough balls onto the prepared baking sheet, spacing them about 2 inches apart

Using the bottom of a glass, gently flatten each dough ball into a disk

Bake in the preheated oven for 10-12 minutes, or until the edges are set and lightly golden

Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely
