Healthy Turkey Stuffed Pumpkin
Celebrate Pumpkin Day with this delicious and healthy keto-friendly recipe! A small pumpkin is stuffed with savory ground turkey seasoned with aromatic herbs, creating a flavorful and satisfying dish perfect for any autumn meal.
Ingredients:
- 1 small pumpkin
- 1 lb ground turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon olive oil
- 1 teaspoon dried sage
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1/2 cup shredded cheese optional
Instructions:
Preheat oven to 375F 190C
Cut the top off the pumpkin and remove seeds and pulp
Heat olive oil in a skillet over medium heat
Add diced onion and minced garlic, cook until softened
Add ground turkey, sage, thyme, salt, and pepper
Cook until turkey is browned
Spoon turkey mixture into the hollowed-out pumpkin
Place the pumpkin on a baking sheet and bake for 45-60 minutes, or until the pumpkin flesh is tender
If desired, sprinkle shredded cheese on top during the last 10 minutes of baking
Once cooked, remove from oven, let cool slightly, and serve
