Peanut Butter Cream Cheese Bites

Ingredients:
- 1/2 cup creamy peanut butter
- 4 oz cream cheese, softened
- 1/4 cup powdered erythritol
- 1 tsp vanilla extract
- 1/4 cup unsweetened shredded coconut optional
Instructions:
In a mixing bowl, combine creamy peanut butter, softened cream cheese, powdered erythritol, and vanilla extract
Mix until well combined and smooth
If desired, fold in unsweetened shredded coconut for added texture
Scoop tablespoon-sized portions of the mixture and roll them into balls
Place the balls onto a parchment-lined baking sheet
Optional: Roll the balls in additional shredded coconut for coating
Chill in the refrigerator for at least 30 minutes, or until firm
