Keto Coconut Flour Muffins



Delicious keto-friendly muffins made with coconut flour, perfect for a low-carb breakfast or snack.

Ingredients:

  • 4 eggs
  • 1/2 cup coconut flour
  • 1/4 cup unsweetened almond milk
  • 1/4 cup melted coconut oil
  • 1/4 cup erythritol or preferred keto-friendly sweetener
  • 1 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions:

Preheat the oven to 350F 175C

In a mixing bowl, beat the eggs until fluffy

Add melted coconut oil, almond milk, and vanilla extract

Mix well

In a separate bowl, mix coconut flour, erythritol, baking powder, and salt

Gradually add dry ingredients to the wet mixture, stirring until well combined

Grease a muffin tin or use liners

Pour the batter evenly into each muffin cup

Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean

Allow the muffins to cool slightly before serving
