Portobello Avocado Chimichurri Burger
A mouthwatering vegetarian burger featuring grilled Portobello mushrooms topped with creamy avocado chimichurri sauce, served on toasted buns. Perfect for a satisfying meatless meal!
Ingredients:
- 2 large Portobello mushrooms
- 1 ripe avocado
- 1/4 cup fresh parsley
- 2 cloves garlic
- 2 tablespoons red wine vinegar
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 burger buns
- Optional toppings: lettuce, tomato, onion slices
Instructions:
Preheat grill to medium-high heat
Clean Portobello mushrooms and remove stems
In a food processor, combine avocado, parsley, garlic, red wine vinegar, olive oil, salt, and pepper
Blend until smooth to make the chimichurri sauce
Brush mushrooms with olive oil and season with salt and pepper
Grill mushrooms for 4-5 minutes per side, until tender
Toast burger buns on the grill for 1-2 minutes
Assemble burgers by spreading chimichurri sauce on the bottom bun, placing grilled Portobello mushroom on top, and adding optional toppings
Top with the other half of the bun and serve immediately
