Rainbow Roll Sushi



Rainbow Roll Sushi is a colorful and tasty dish made with avocado, cucumber, fresh fish, and sushi rice. It looks great on any sushi platter because of how bright it is.

Ingredients:

  • 2 cups sushi rice
  • 2 1/2 cups water
  • 1/2 cup rice vinegar
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • Nori seaweed sheets
  • Assorted sushi-grade fish salmon, tuna, yellowtail
  • 1 avocado, thinly sliced
  • 1 cucumber, julienned
  • Sesame seeds
  • Soy sauce, for serving
  • Pickled ginger, for serving
  • Wasabi, for serving

Instructions:

Rinse sushi rice under cold water until the water runs clear

Cook rice with water in a rice cooker or on the stovetop

In a small saucepan, heat rice vinegar, sugar, and salt until dissolved

Pour the mixture over cooked rice and gently fold to combine

Let it cool

Place a nori sheet on a bamboo sushi mat

Spread a thin layer of sushi rice over the nori, leaving about 1/2 inch border at the top

Arrange slices of fish, avocado, and cucumber in a line across the center of the rice

Roll the sushi tightly using the bamboo mat, starting from the bottom

Sprinkle sesame seeds over the rolled sushi

Slice the sushi roll into bite-sized pieces using a sharp knife

Serve with soy sauce, pickled ginger, and wasabi
