Summer Chickpea Salad with Honey Garlic Lime Vinaigrette



This Summer Chickpea Salad with Honey Garlic Lime Vinaigrette is great for hot weather because it is healthy and cool. The earthy taste of chickpeas goes well with the sweetness of cherry tomatoes, the crunch of cucumber, and the heat of red onion. A burst of flavor comes from the honey garlic lime vinaigrette. Fresh herbs and feta cheese finish off the dish. Toast some sunflower seeds and sprinkle them on top to add more texture and nuttiness.

Ingredients:

  • 2 cups cooked chickpeas
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup toasted sunflower seeds

Instructions:

In a large bowl, combine the cooked chickpeas, cherry tomatoes, cucumber, and red onion

In a small bowl, whisk together the honey, minced garlic, lime juice, olive oil, salt, and pepper to make the vinaigrette

Pour the vinaigrette over the salad and toss to combine

Gently fold in the chopped cilantro and mint leaves

Sprinkle the crumbled feta cheese and toasted sunflower seeds over the top of the salad

Serve immediately or refrigerate until ready to serve
