Vegan Tuscan Rigatoni
This Vegan Tuscan Rigatoni is a delightful Italian-inspired dish featuring hearty rigatoni pasta tossed with a flavorful medley of vegetables and white beans, seasoned with aromatic herbs. It's a satisfying and wholesome meal that celebrates the rich flavors of Tuscan cuisine.
Ingredients:
- 300g rigatoni pasta
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 red bell pepper, diced
- 1 zucchini, diced
- 1 cup cherry tomatoes, halved
- 1 cup canned white beans, drained and rinsed
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions:
Cook rigatoni according to package instructions until al dente
Drain and set aside
In a large pan, heat olive oil over medium heat
Add onions and garlic, saut until fragrant
Add bell pepper and zucchini, cook until slightly softened
Stir in cherry tomatoes and white beans
Cook for another 5-7 minutes
Season with dried oregano, dried basil, salt, and pepper
Add cooked rigatoni to the pan, toss until well combined and heated through
Garnish with fresh basil leaves before serving
